ALOO SAMOSA
Here is a
recipe for Aloo Samosas;
Ingredients:
- For the dough:
- 2 cups all-purpose flour
- 1/4 cup vegetable oil
- 1/2 teaspoon salt
- 1/2 cup water
- For the filling:
- 4 medium potatoes, peeled and
diced
- 1 onion, finely chopped
- 1 green chili, finely chopped
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander seeds
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
powder
- Salt to taste
- 1 tablespoon oil
- 2 tablespoons chopped coriander
leaves
- Oil for deep-frying
Instructions:
1.
Start
by preparing the dough. In a mixing bowl, combine the flour, salt, and oil.
Blend well until the combination looks like bread morsels.
2.
Gradually
add water, and knead the dough until it forms a smooth ball.cover the mixture
with the sodden material and put it away.
3.
For
the filling, heat 1 tablespoon of oil in a skillet. Add the cumin seeds,
coriander seeds, and fennel seeds.Sear for a couple of moment until fragrant.
4.
Add
the slashed onions and green stew to the skillet. Fry until the onions are
translucent.
5.
Add
the diced potatoes, turmeric powder, garam masala powder, and salt. Mix well
and cover the pan. Cook for 10-12 minutes or until the potatoes are delicate.
6.
Turn
off the heat and add the chopped coriander leaves to the potato mixture. Blend
well and let the filling cool.
7.
Divide
the dough into 8 equal portions. Roll each portion into a circle of 6 inches
diameter.
8.
Cut
the circle in half, and shape each half into a cone. Fill the cone with the
potato mixture and seal the edges by applying water.
9.
Heat
oil in a deep frying pan.When the oil is hot cautiously add the samosas to the
skillet.
10. Fry the samosas until they are golden
brown on all sides.
11. Remove the samosas from the oil and
place them on a paper towel to drain the excess oil.
12. Serve hot with mint chutney or
tamarind chutney.
