Here's a
recipe for a classic vanilla gelato:
Ingredients:
- 2 cups whole milk
- 1 cup heavy cream
- 4 large egg yolks
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
Instructions:
- In a medium pan,heat the milk
and weightly cream over medium intensity until it simply starts to stew.
Remove from heat and set aside.
- In a separate bowl, whisk
together the egg yolks and sugar until light and frothy.
- Gradually empty the hot milk
combination into the egg blend,whisking continually to keep the eggs from
cooking.
- Empty the combination back into
the pan and spot over low intensity.Cook
blending continually,until the combination thickens and covers the
rear of a spoon.
- Eliminate from intensity and mix
in the vanilla concentrate.
- Strain the combination through a
fine-network sifter into a spotless bowl.Cover and chill in the fridge for
something like 2 hours,or short term.
- Agitate the chilled blendin a
frozen yogurt creator as per the maker’s guidelines.
- Transfer the gelato to a freezer-safe
container and freeze for at least 2 hours, or until firm.
