Italian Polenta Recipe | Healthy Polenta Recipe

Polenta is a traditional Italian dish made from boiled cornmeal, which can be enjoyed on its own or used as a base for other dishes. Here is a simple recipe for making polenta:

Ingredients:

  • 1 cup polenta or yellow cornmeal
  • 4 cups water or chicken broth
  • 1 teaspoon salt
  • 2 tablespoons butter (optional)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions:

  1. In a large pot, bring the water or chicken broth to a boil over medium-high heat.
  2. Once the liquid is boiling, add the salt and slowly pour in the polenta or cornmeal, whisking continuously to avoid clumps.
  3. Reduce the heat to low and continue to whisk the mixture until it starts to thicken, which should take about 5-10 minutes.
  4. Once the polenta is thick and smooth, cover the pot and let it simmer for 30-40 minutes, stirring occasionally.
  5. If desired, add the butter and Parmesan cheese to the polenta and stir until melted and well-combined.
  6. Serve the polenta hot as a side dish or as a base for stews, roasted vegetables, or meat dishes. Enjoy!
