Here's a recipe for kachori, a popular Indian and pakistani snack:
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons oil
- Salt, to taste
- Water, as needed
- 1 cup split peas (chana dal)
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon coriander seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt, to taste
- Oil, for deep frying
Instructions:
- To make the dough, mix together
the flour, oil, and salt in a bowl. Gradually add water and knead until a
smooth and pliable dough forms. Cover with a damp cloth and set aside.
- To make the filling, rinse the
split peas and soak them in water for 2 hours. Drain the water and blend
the split peas in a food processor until they form a coarse paste.
- Heat 2 tablespoons of oil in a
pan and add the cumin seeds, fennel seeds, and coriander seeds. Once they
start to crackle, add the split pea paste, turmeric powder, red chili
powder, and salt. Cook the mixture for 8-10 minutes, stirring
occasionally, until the mixture thickens and the raw smell of the split
peas goes away.
- Let the filling cool down and
then divide it into small balls.
- Carry out the mixture into
little circles, around 3-4 crawls measurements. Place a ball of filling in
the center of each circle.
- Bring the edges of the circle
together to cover the filling and then pinch the edges to seal. Gently
flatten the filled dough balls.
- Heat oil for deep frying in a
kadhai or a deep frying pan. Once the oil is hot, gently slide in the
kachoris and fry until golden brown, flipping occasionally.
- Eliminate the kachoris with an
opened spoon and channel excess oil on a paper towel.
- Serve the kachoris hot with
tamarind or mint chutney.
