 What is the recipe of Vada pav?

Vada pav is a popular street food from the state of Maharashtra in India. It is a delicious and filling snack that consists of a fried potato dumpling (called vada) sandwiched between a soft bread roll (called pav) and served with a variety of chutneys and spices. Here's a simple recipe to make vada pav at home:


Ingredients:

For the vada:

  • 3-4 large potatoes, boiled and mashed
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1-2 green chilies, finely chopped
  • A few curry leaves, chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • Oil for frying

For the pav:

  • 8-10 small bread rolls (pav)
  • Butter for toasting

For the chutneys:

  • Tamarind chutney
  • Green chutney

For serving:

  • Red chili powder
  • Chaat masala
  • Finely chopped onions
  • Fresh coriander leaves

Instructions:

  1. In a container,heat a few oil and add mustard seeds and cumin seeds. Once they start to crackle, add ginger paste, garlic paste, green chilies, and curry leaves. Sauté for a minute or two.
  2. Add turmeric powder, red bean stew powder,and salt to the container and blend well.
  3. Add the pureed potatoesto the skillet and blend well. Cook for a few minutes until the potato mixture is dry.
  4. Allow the potato mixture to cool down a bit. Then, shape it into small balls or patties.
  5. Heat oil in a deep pan for frying. Once the oil is hot, carefully drop the potato balls or patties into the oil and fry until golden brown.
  6. Once the vadas are fried, remove them from the oil and place them on a paper towel to absorb any excess oil.
  7. For the pav, cut the bread rolls in half and spread some butter on them. Toast the rolls on a griddle or in a pan until they are lightly browned.
  8. To assemble the vada pav, place a vada in the center of a pav. Add a spoonful of tamarind chutney and green chutney on top of the vada.
  9. Sprinkle some red chili powder and chaat masala over the chutneys. Top with some finely chopped onions and fresh coriander leaves.
  10. Serve hot with more chutney and a side of fried green chilies or potato chips.
