 What is the recipe of Pav Bhaji?

Pav Bhaji is a popular street food dish from Mumbai, India. It's a spicy and flavorful vegetable curry that is served with soft buttery buns (pav). Here's a recipe for making pav bhaji at home:


Ingredients:

For the bhaji:

  • 3-4 medium-sized potatoes, boiled and mashed
  • 1 cup cauliflower florets, finely chopped
  • 1 cup green peas
  • 1 large onion, finely chopped
  • 2 medium-sized tomatoes, finely chopped
  • 1 capsicum, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2-3 green chilies, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 tsp pav bhaji masala powder
  • Salt to taste
  • 3-4 tbsp butter
  • 1 lemon, cut into wedges

For the pav:

  • 8-10 pav buns
  • 2-3 tbsp butter
  • A pinch of pav bhaji masala powder
  • Finely chopped coriander leaves, for garnishing

Instructions:

  1. In a huge container heat spread and add cumin seeds. When the seeds start to splutter, add the chopped onions, green chilies, and ginger-garlic paste. Saute until the onions turn translucent.
  2. Add the hacked tomatoes and cook until they become delicate and soft. Then, add the finely chopped capsicum and cook for 2-3 minutes.
  3. Add the finely chopped cauliflower florets and green peas to the pan. Mix well and cook for another 5-7 minutes.
  4. Add the mashed potatoes, turmeric powder, pav bhaji masala powder, and salt to taste. Mix well and mash the vegetables using a potato masher or back of a spoon. Cook for another 5-7 minutes.
  5. In a separate pan, heat butter and pav bhaji masala powder. Slice the pav buns into half and roast them on the pan with the butter and masala.
  6. Garnish the bhaji with finely chopped coriander leaves and a dollop of butter. Serve hot with the roasted pav buns and lemon wedges.
