How to make pani puri at home?

Pani puri is a popular Indian street food that consists of small, crispy puris filled with a spicy and tangy water, mashed potatoes, chickpeas, and chutney. Here's a recipe for making pani puri at home:

Ingredients:

  • 1 cup semolina (sooji)
  • 1/4 cup all-purpose flour (maida)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • Oil for frying
  • 1 cup boiled and mashed potatoes
  • 1/2 cup boiled chickpeas
  • 1/4 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1/4 cup tamarind chutney
  • 1/4 cup mint-coriander chutney
  • 1/4 cup chaat masala
  • 1/4 cup cumin powder
  • 1/4 cup black salt
  • 1/4 cup lemon juice
  • 1/2 cup water
  • Ice cubes

Instructions:

  1. In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Mix well.
  2. Add enough water to make a stiff dough. Knead for a coupleof moments until the batter is smooth and malleable.
  3. Divide the dough into small balls and roll them into thin circles. Use a cookie cutter or a small bowl to cut out small circles from the rolled dough.
  4. Heat oil in a deep frying pan. Once the oil is hot, fry the puris until they turn golden brown and crispy. Drain excess oil and set aside.
  5. In a mixing bowl, combine mashed potatoes, boiled chickpeas, chopped onion, and cilantro. Mix well.
  6. In another mixing bowl, mix together tamarind chutney, mint-coriander chutney, chaat masala, cumin powder, black salt, lemon juice, and water. Mix well.
  7. Take each puri and make a small hole in the center using your thumb or a fork. Fill the puri with the potato mixture and dip it into the spicy water.
  8. Garnish with some more chopped onion and cilantro. Serve immediately with ice cubes on the side.

Enjoy the delicious and tangy taste of homemade pani puri!
