How to prepare Nasi Lemak recipe?
Nasi Lemak is a traditional Malaysian dish that consists of
fragrant coconut rice, crispy fried anchovies, roasted peanuts, boiled egg, and
spicy sambal sauce. Here's a recipe for making Nasi Lemak:
Ingredients:
- 2 cups
of jasmine rice
- 1 can
of coconut milk (400ml)
- 1
pandan leaf (optional)
- 1 tsp
of salt
- 1 cup
of water
- 1 cup
of roasted peanuts
- 1 cup
of fried anchovies
- 4
boiled eggs
- Sambal
sauce (see recipe below)
Instructions:
- Rinse
the rice several times until the water is clear, then soak the rice in
water for about 30 minutes.
- In a
pot, add the soaked rice, coconut milk, pandan leaf, salt, and water.
Bring the mixture to a boil.
- When
it bubbles,diminish the intensity to low and cover the pot. Let the rice
cook for about 15-20 minutes, or until the liquid has been fully absorbed
and the rice is fluffy and cooked through.
- Once
the rice is cooked, remove the pandan leaf and fluff the rice with a fork.
- Serve
the rice on a plate with roasted peanuts, fried anchovies, boiled egg, and
sambal sauce.
Sambal Sauce Recipe:
Ingredients:
- 10
dried red chilies,absorbed high temp water for 10 minutes.
- 2
shallots, peeled
- 2
cloves of garlic, peeled
- 1 tbsp
of belacan (shrimp paste)
- 1 tbsp
of tamarind paste
- 2 tbsp
of sugar
- 1 tsp
of salt
Instructions:
- In a
blender, blend the soaked red chilies, shallots, garlic, and belacan into
a paste.
- In a
pan, heat up some oil and sauté the chili paste for about 5 minutes until
fragrant.
- Add in
the tamarind paste, sugar, and salt, and continue to stir until the sauce
thickens.
- Once
the sauce is thick, remove from heat and let it cool.
- Serve
the sambal sauce alongside the Nasi Lemak.
