How to make mapo tofu at home?
Mapo tofu is
a spicy and savory Sichuan dish that combines tofu and ground meat in a
flavorful sauce. Here's a recipe for making it at home:
Ingredients:
- 1 block of firm tofu (around 14
oz)
- 1/2 lb ground pork or beef
- 2 tbsp vegetable oil
- 1 tbsp Sichuan peppercorns
- 2 tbsp chili bean paste
(doubanjiang)
- 2 tbsp aged dark beans,flushed
and depleted
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 cup chicken or vegetable stock
- 1 tbsp soy sauce
- 1 tsp sugar
- 2 green onions, thinly sliced
Directions:
1.
Cut
the tofu into 1-inch 3D shapes and put away.
2.
Heat
the vegetable oil in a wok or enormous skillet over medium high intensity.Add
the Sichuan peppercorn and sear for 1-2 mintues until fragrant.
3.
Add
the ground pork or beef to the wok and cook, stirring frequently, until it is
browned and cooked through.
4.
Add
the chili bean paste, fermented black beans, garlic, and ginger to the wok and
stir-fry for 1-2 minutes until fragrant.
5.
Pour
in the chicken or vegetable stock, soy sauce, and sugar, and bring the mixture
to a boil.
6.
Gently
add the tofu cubes to the wok and stir carefully to coat them with the sauce.
Reduce the heat to low and simmer for 10-15 minutes until the tofu is heated
through and the sauce has thickened slightly.
7.
Stir
in the sliced green onions and serve hot over steamed rice.
