How to make Laksa recipe?
Laksa is a
popular spicy noodle soup that originated in Southeast Asia, particularly in
Malaysia and Singapore. There are many variations of laksa, but the most common
one is the curry laksa. Here's a recipe for curry laksa:
Ingredients:
- 500g rice noodles
- 400g cooked prawns
- 2 chicken breasts, sliced
- 2 tablespoons oil
- 2 tablespoons curry powder
- 2 tablespoons tamarind paste
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 4 cups chicken stock
- 1 can coconut milk
- 1 tablespoon sugar
- Salt to taste
- Bean sprouts
- Fresh cilantro
- Sambal chili paste (optional)
Instructions:
- Soak the rice noodles in hot
water for about 20 minutes or until soft. Drain and set aside.
- Heat the oil in an enormous pot
or wok over medium intensity . Add the curry powder and stir-fry for a few
seconds until fragrant.
- Add the sliced chicken and
stir-fry until cooked through, about 5-7 minutes.
- Add the tamarind paste,
lemongrass, and kaffir lime leaves to the pot. Stir well to combine.
- Pour in the chicken stock and
heat to the point of boiling. Reduce the heat and simmer for 10 minutes.
- Add the coconut milk and sugar
to the pot. Season with salt to taste.
- Add the cooked prawns and cook
for another 2-3 minutes until heated through.
- To serve, divide the rice
noodles into serving bowls. Ladle the laksa broth over the noodles. Top
with bean sprouts, fresh cilantro, and sambal chili paste (optional).
Serve hot.
