Here's a recipe for Kathi roll, a popular Indian street food:


Ingredients:

  • 4-5 chapatis or parathas
  • 1 lb boneless chicken, cut into slim strips
  • 1 large onion, sliced
  • 1 large tomato, chopped
  • 2-3 green chilies, chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp garam masala powder
  • Salt to taste
  • 2 tbsp oil
  • 1/4 cup chopped coriander leaves
  • 1 tbsp lemon juice
  • 1/4 cup mint chutney
  • 1/4 cup tamarind chutney

Instructions:

  1. Heat oil in a pan and add sliced onions, green chilies, ginger paste and garlic paste. Saute briefly until onions become brilliant brown.
  2. Add hacked tomatoes and cook for 2-3 minutes until they are delicate and soft.
  3. Add chicken strips and mix well. Cook on medium flame until chicken is cooked through and no longer pink.
  4. Add turmeric powder, coriander powder, cumin powder, garam masala powder and salt to taste. Blend well and cook for another 2-3 minutes.
  5. Add chopped coriander leaves and lemon juice. Mix well and turn off the flame.
  6. Heat the chapatis or parathas on a tawa or griddle until they are slightly toasted.
  7. Take a chapati or paratha and spread a tablespoon of mint chutney and a tablespoon of tamarind chutney on it.
  8. Place a spoonful of the chicken mixture on the chapati or paratha and roll it tightly.
  9. Serve hot with additional chutney or ketchup.
