Here's a
recipe for Kathi roll, a popular Indian street food:
Ingredients:
- 4-5 chapatis or parathas
- 1 lb boneless chicken, cut into
slim strips
- 1 large onion, sliced
- 1 large tomato, chopped
- 2-3 green chilies, chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp garam masala powder
- Salt to taste
- 2 tbsp oil
- 1/4 cup chopped coriander leaves
- 1 tbsp lemon juice
- 1/4 cup mint chutney
- 1/4 cup tamarind chutney
Instructions:
- Heat oil in a pan and add sliced
onions, green chilies, ginger paste and garlic paste. Saute briefly until
onions become brilliant brown.
- Add hacked tomatoes and cook for
2-3 minutes until they are delicate and soft.
- Add chicken strips and mix well.
Cook on medium flame until chicken is cooked through and no longer pink.
- Add turmeric powder, coriander
powder, cumin powder, garam masala powder and salt to taste. Blend well
and cook for another 2-3 minutes.
- Add chopped coriander leaves and
lemon juice. Mix well and turn off the flame.
- Heat the chapatis or parathas on
a tawa or griddle until they are slightly toasted.
- Take a chapati or paratha and
spread a tablespoon of mint chutney and a tablespoon of tamarind chutney
on it.
- Place a spoonful of the chicken
mixture on the chapati or paratha and roll it tightly.
- Serve hot with additional
chutney or ketchup.
