Rabri is a
traditional Indian and Pakistani dessert made by simmering milk for a long time
until it thickens and develops a creamy texture. It's often served chilled with
chopped nuts and dried fruits. Here's a recipe for rabri:
Ingredients:
- 2 liters full-fat milk
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- A pinch of saffron
- Chopped nuts and dried fruits

Instructions:
1.
In
a large, heavy-bottomed pot, pour the milk and bring it to a boil over medium
heat.

Reduce
the heat to low and simmer the milk, stirring frequently, until it reduces to
one-third of its original volume. This can take somewhere in the range of 1 to
2 hour.

As
the milk simmers, stir it frequently and scrape the sides and bottom of the pot
to prevent the milk from sticking or scorching.
4.
After
the milk has reduced to one-third of its original volume, add the sugar,
cardamom powder, and saffron. Stir well to combine.
5.
Continue
to simmer the milk until it thickens and develops a creamy texture. This can
require an additional 30 minutes to 60 minuts.
6.
Once
the rabri has thickened to your liking, remove it from the heat and let it cool
to room temperature.
7.
Once
cooled, chill the rabri in the refrigerator for at least an hour.
8.
Before
serving, garnish the rabri with chopped nuts and dried fruits. Serve chilled
and enjoy!
