  • Salt to taste
  • Water as required
  • Oil or ghee for greasing the idli moulds

Instructions:

  1. Rinse the urad dal and idli rice separately until the water runs clear. Soak them in enough water separately for at least 4 hours or overnight.
  2. Drain the water from the urad dal and grind it in a mixer or wet grinder until it becomes light and fluffy. It should take about 20-25 minutes. You can add water little by little as required to help with the grinding process.Move the batter to a huge blending bowl.
  3. Drain the water from the rice and grind it to a smooth batter in the same mixer or wet grinder. This should take about 25-30 minutes. Add water as required to help with the grinding process. Add the rice batter to the mixing bowl with the urad dal batter.
  4. Mix both the batters together until they are well combined. Add salt to taste and blend well once again.
  5. Cover the bowl with a lid or a plate and let the batter ferment for about 8-10 hours or overnight. The batter should double in volume and become frothy.
  6. Grease the idli moulds with oil or ghee. Pour the batter into the moulds until they are about 3/4 full.
  7. Place the idli moulds in a steamer and steam for about 10-12 minutes or until a toothpick inserted in the center of an idli comes out clean.
  8. Once done, remove the idli moulds from the steamer and let them cool for a minute or two. Use a spoon or a knife to remove the idlis from the moulds.
  9. Serve hot with chutney, sambar or any other accompaniment of your choice.
