gram lentils)

rice)
- Salt to taste
- Water as required
- Oil or ghee for greasing the
idli moulds
Instructions:
- Rinse the urad dal and idli rice
separately until the water runs clear. Soak them in enough water
separately for at least 4 hours or overnight.
- Drain the water from the urad
dal and grind it in a mixer or wet grinder until it becomes light and
fluffy. It should take about 20-25 minutes. You can add water little by
little as required to help with the grinding process.Move the batter to a
huge blending bowl.
- Drain the water from the rice
and grind it to a smooth batter in the same mixer or wet grinder. This
should take about 25-30 minutes. Add water as required to help with the
grinding process. Add the rice batter to the mixing bowl with the urad dal
batter.
- Mix both the batters together
until they are well combined. Add salt to taste and blend well once again.
- Cover the bowl with a lid or a
plate and let the batter ferment for about 8-10 hours or overnight. The
batter should double in volume and become frothy.
- Grease the idli moulds with oil
or ghee. Pour the batter into the moulds until they are about 3/4 full.
- Place the idli moulds in a
steamer and steam for about 10-12 minutes or until a toothpick inserted in
the center of an idli comes out clean.
- Once done, remove the idli
moulds from the steamer and let them cool for a minute or two. Use a spoon
or a knife to remove the idlis from the moulds.

or any other accompaniment of your choice.
