How to make Hainanese chicken rice at home?
Here's a recipe for Hainanese chicken rice!
Ingredients:
For the
chicken:
- 1 whole chicken, about 1.5-2kg
- 2 stalks spring onion, cut into
sections
- 2 inches ginger, sliced
- 4 cloves garlic, crushed
- 2 tbsp salt
For the
rice:
- 3 cups jasmine rice
- 3 cups chicken stock
- 3 cloves garlic, minced
- 3 tbsp oil
- 1 tsp salt
For the
sauce:
- 2 tbsp grated ginger
- 2 cloves garlic, minced
- 1 red chilli, minced
- 1 tbsp sugar
- 1 tsp salt
- 2 tbsp lime juice
- 2 tbsp soy sauce
- 1 tbsp sesame oil
For the
garnish:
- 1 cucumber, sliced
- Handful of coriander leaves
Instructions:
- Rinse the chicken and remove any
excess fat. Rub the chicken with salt all around.
- Stuff the chicken cavity with
the spring onions and ginger.
- Place the chicken in a large pot
and add enough water to cover the chicken.Heat to the point of boiling
over high intensity to low and stew for 30- 40 minutes until the chicken
is cooked through.
- Remove the chicken from the pot
and place it in a bowl of ice water for 10-15 minutes to cool. Reserve the
chicken stock for the rice.
- To make the rice, heat the oil in
a large pot over medium heat. Add the minced garlic and sauté until
fragrant,around 1-2 minutes.
- Add the rice and stir well to
coat with the garlic and oil.
- Add the reserved chicken stock
and salt to the pot, and bring to a boil. Reduce heat to low, cover and
simmer for 18-20 minutes, or until the rice is cooked.
- To make the sauce, all the sauce
fixings in the bowl and blend well.
- To serve, carve the chicken into
bite-sized pieces and arrange them on a platter.Decorate with cut
cucumbers and coriander leaves.
Serve the rice and sauce on the side, and enjoy!
