 How to make Hainanese chicken rice at home?

 Here's a recipe for Hainanese chicken rice!


Ingredients:

For the chicken:

  • 1 whole chicken, about 1.5-2kg
  • 2 stalks spring onion, cut into sections
  • 2 inches ginger, sliced
  • 4 cloves garlic, crushed
  • 2 tbsp salt

For the rice:

  • 3 cups jasmine rice
  • 3 cups chicken stock
  • 3 cloves garlic, minced
  • 3 tbsp oil
  • 1 tsp salt

For the sauce:

  • 2 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 red chilli, minced
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp lime juice
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

For the garnish:

  • 1 cucumber, sliced
  • Handful of coriander leaves

Instructions:

  1. Rinse the chicken and remove any excess fat. Rub the chicken with salt all around.
  2. Stuff the chicken cavity with the spring onions and ginger.
  3. Place the chicken in a large pot and add enough water to cover the chicken.Heat to the point of boiling over high intensity to low and stew for 30- 40 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot and place it in a bowl of ice water for 10-15 minutes to cool. Reserve the chicken stock for the rice.
  5. To make the rice, heat the oil in a large pot over medium heat. Add the minced garlic and sauté until fragrant,around 1-2 minutes.
  6. Add the rice and stir well to coat with the garlic and oil.
  7. Add the reserved chicken stock and salt to the pot, and bring to a boil. Reduce heat to low, cover and simmer for 18-20 minutes, or until the rice is cooked.
  8. To make the sauce, all the sauce fixings in the bowl and blend well.
  9. To serve, carve the chicken into bite-sized pieces and arrange them on a platter.Decorate with cut cucumbers and coriander leaves.

Serve the rice and sauce on the side, and enjoy!
