Chole Bhature Recipe
Chole
bhature is a popular North Indian dish made with spicy chickpea curry (chole)
and fried bread (bhature). Here's the recipe:
Ingredients
for Chole:
- 1 cup dried chickpeas
- 3-4 cups water for soaking
- 1 onion, finely chopped
- 2-3 tomatoes, finely chopped
- 2-3 green chillies, chopped
- 1 inch ginger, grated
- 4-5 garlic cloves, minced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- 2-3 cups water
- Coriander leaves for garnish
Ingredients
for Bhature:
- 2 cups all-purpose flour
- 1/2 cup yogurt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tbsp sugar
- 2 tbsp oil
- Water as needed
- Oil for frying
Instructions:
1.
Soak
the chickpeas overnight or for 6-8 hours in enough water. Drain the water and
rinse the chickpeas well.
2.
In
a pressure cooker or a pot, heat oil over medium heat. Add cumin seeds and let
them splutter.
3.
Add
hacked onion and saute until they become brilliant brown.
4.
Add
grated ginger, minced garlic, and green chillies.Saute briefly or until the
crued smell disappears.
5.
Add
hacked tomatoes and cook until they turn delicate and soft.
6.
Add
all the spice powders - coriander powder, cumin powder, turmeric powder, red
chilli powder, and garam masala. Mix well.
7.
Add
soaked and drained chickpeas and mix well.
8.
Add
2-3 cups of water and salt to taste. Mix well.
9.
Close
the pressure cooker lid and cook on high heat for 10-12 whistles or until the
chickpeas are cooked through. If cooking in a pot, cook for 30-40 minutes until
the chickpeas are cooked.
10. Once the pressure cooker cools down,
open the lid and check the consistency of the chole. If it's too thick, add
some water and mix well. Adjust salt and spices if needed.
11. Garnish with coriander leaves and
keep aside.
Instructions
for Bhature:
1.
In
a mixing bowl, add all-purpose flour, salt, sugar, baking powder, baking soda,
and oil. Mix well.
2.
Add
yogurt and mix everything together.
3.
Slowly
add water and knead to form a smooth and elastic dough. Cover the dough with a
damp cloth and let it rest for 20-30 minutes.
4.
Divide
the dough into equal-sized balls.
5.
Roll
each ball into a circle or oval shape, about 1/4 inch thick.
6.
Heat
oil in a deep frying pan. Once hot, add the rolled bhature to the oil and fry
until golden brown on both sides.
7.
Channel
the extra oil on a paper towel.
8.
Serve
hot with chole.
