Shami Kabab
Here's a recipe for
shami kebab:
Ingredients:
- 500g
minced lamb or beef
- 1
cup chana dal (split Bengal gram)
- 1
onion, chopped
- 4-5
cloves of garlic, minced
- 1
inch piece of ginger, grated
- 2-3
green chilies, chopped
- 2
tsp coriander powder
- 1
tsp cumin powder
- 1
tsp garam masala
- 1/2
tsp red chili powder
- Salt
to taste
- 2-3
tbsp oil
- 2-3
eggs, beaten
- Fresh
coriander leaves, chopped
- Lemon
wedges, to serve
Instructions:

Rinse the chana dal in water and soak it in
water for about 3-4 hours.

Once the dal is soaked, drain the water and add
it to a pressure cooker with enough water to cover it. Add some salt and
pressure cook the dal for about 3-4 whistles or until it becomes soft and
well-cooked.

Strain any excess water and keep the cooked dal
aside.

In a large mixing bowl, add the minced meat,
cooked dal, chopped onion, garlic, ginger, green chilies, coriander powder,
cumin powder, garam masala, red chili powder, and salt. Mix everything together
until well combined.

Add 1-2 tablespoons of oil and mix again. Cover
the bowl and allow it to marinate for
something like 30 minutes or as long as 2 hours.
6.
Heat a non-stick frying pan over medium heat.
Once the pan is hot, take a small portion of the mixture and shape it into a
flat round kebab.
7.
Dip the kebab in beaten egg and carefully place
it in the pan. Fry the kebab for 3-4 minutes on each side or until it turns
golden brown and crispy.
8.
Repeat the same process with the remaining
mixture to make more kebabs.
9.
Serve the shami kebab hot, garnished with
chopped coriander leaves and lemon wedges.
