Shahi Tukda
Shahi Tukda
is a delicious and indulgent Indian dessert that is made with fried bread,
soaked in sweet saffron syrup, and topped with creamy rabri or thickened milk.
Here's a simple recipe to make Shahi Tukda at home:
Ingredients:
- 6 slices of bread
- 1 cup milk
- 1 cup water
- 1 cup sugar
- A pinch of saffron strands
- 1 tsp cardamom powder
- 1 cup oil for frying
- Chopped nuts (almonds and
pistachios) for garnishing
For Rabri:
- 4 cups milk
- 1/2 cup sugar
- 1/2 tsp cardamom powder
Instructions:
1.
In
a heavy-bottomed pan, heat 4 cups of milk on low heat until it reduces to half
the quantity. Add sugar and cardamom powder and mix well. Cook for another 5-7
minutes until the milk thickens to a rabri-like consistency. Keep aside.

Cut
the bread slices into small triangles. Heat oil in a frying pan and deep fry
the bread slices until they turn golden brown. Drain on paper towels and keep
aside.
3.
In
a separate pan, add 1 cup water and 1 cup sugar. Heat until the sugar dissolves
completely. Add a pinch of saffron strands and cardamom powder and stir well.
4.
Dip
the fried bread slices in the sugar syrup and let them soak for a minute or
two. Remove them from the syrup and arrange them on a serving plate.
5.
Pour
the prepared rabri over the soaked bread slices, making sure to cover them
completely.
6.
Garnish
with chopped nuts (almonds and pistachios) and refrigerate for 2-3 hours until
the rabri sets and the shahi tukda is chilled.
7.
Serve
chilled and enjoy the rich and indulgent Shahi Tukda!
