                                                         RASMALAI


 Here's a recipe for Rasmalai, a popular dessert from the Indian subcontinent:

Ingredients:

For the Rasgullas:

  • 4 cups of whole milk
  • 1/4 cup of lemon juice
  • 1 1/2 cups of sugar
  • 4 cups of water

For the Ras Malai:

  • 2 cups of whole milk
  • 1 can of condensed milk
  • 1/4 tsp of cardamom powder
  • 1 tbsp of chopped pistachios and almonds
  • Few strands of saffron

Instructions:

1.     First, prepare the Rasgullas:

  • In a heavy bottom pot, bring 4 cups of milk to a boil.
  • Once the milk starts boiling, reduce the heat and add lemon juice slowly while stirring the milk.
  • Keep stirring until the milk curdles and the whey separates.
  • Pour the curdled milk over a muslin cloth and rinse it with cold water to remove the lemony flavor.
  • Gather the edges of the muslin cloth and squeeze out the excess water from the curdled milk.
  • Tie the muslin cloth tightly and hang it for 30 minutes to remove any remaining water.
  • After 30 minutes, remove the chenna (cottage cheese) from the muslin cloth and knead it well to make a smooth dough.
  • Divide the dough into small lemon-sized balls and flatten them slightly.
  • In another pot, mix 4 cups of water and 1 1/2 cups of sugar and bring it to a boil.
  • Add the flattened balls of chenna to the boiling syrup and cover the pot.
  • Cook on medium heat for 15 minutes until the balls double in size.
  • Turn off the heat and let the rasgullas soak in the syrup for another 30 minutes.

2.     Now, prepare the Ras Malai:

  • In a separate pan, bring 2 cups of milk to a boil.
  • Add the condensed milk and cardamom powder to the boiling milk and stir well.
  • Let the mixture simmer on low heat for 5-7 minutes until it thickens slightly.
  • Switch off the intensity and let it cool.
  • Add a few strands of saffron to the mixture and mix well.
  • Squeeze out the rasgullas from the syrup and press them gently to remove any excess syrup.
  • Add the rasgullas to the prepared milk mixture and refrigerate for a few hours to chill.
  • Garnish with chopped pistachios and almonds before serving.
