PAKISTANI STYLE HALEEM
Here's a
recipe for Pakistani-style haleem:
Ingredients:
- 1 cup whole wheat grains
- 1/2 cup gram lentils
- 1/2 cup red lentils
- 1/2 cup split chickpeas
- 1/2 cup barley
- 1 kg boneless beef or mutton,
cut into small pieces
- 2 onions, chopped
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tbsp red chili powder
- 1 tbsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp cumin powder
- Salt to taste
- 1/2 cup cooking oil
- Water as required
- 1/2 cup ghee or clarified butter
- 2 tbsp garam masala powder
- Fried onions, lemon wedges,
chopped ginger, green chilies, and coriander leaves for garnish
Instructions:
1.
Wash
and soak the whole wheat grains, gram lentils, red lentils, split chickpeas,
and barley for at least 3 hours.
2.
In
a large pot, add the soaked grains and lentils along with the meat, chopped
onions, ginger paste, garlic paste, red chili powder, turmeric powder,
coriander powder, cumin powder, salt, and cooking oil. Add sufficient water to
cover all that by a couple inches.

Cook
on medium heat for 4-5 hours, stirring occasionally and adding more water as
needed to prevent sticking and to get the desired consistency. The haleem
should be very thick and the grains and meat should be completely cooked and
broken down.

Once
the haleem is fully cooked, use a hand blender or a potato masher to further
break down any remaining chunks of meat and grains.
5.
In
a separate pan, heat the ghee or clarified butter and fry the garam masala
powder for a minute or so until fragrant.
6.
Add
the fried garam masala to the haleem and mix well. Cook for another 10-15
minutes.
7.
Serve
hot, garnished with fried onions, lemon wedges, chopped ginger, green chilies,
and coriander leaves.
