Hot and Sour
Soup Recipe:
Ingredients:
- 4 cups of chicken or vegetable
broth
- 1/2 cup of shiitake mushrooms,
sliced
- 1/2 cup of bamboo shoots, sliced
- 1/2 cup of carrots, sliced
- 1/2 cup of tofu, diced
- 2 tablespoons of cornstarch
- 2 tablespoons of water
- 3 tablespoons of rice vinegar
- 2 tablespoons of soy sauce
- 1 tablespoon of chili paste
- 1 teaspoon of sesame oil
- 2 eggs, beaten
- 1/4 cup of chopped green onions
- Salt and pepper to taste
Instructions:
1.
In
a huge pot.heat the chicken or vegetable stock to the point of boiling over
medium high intensity. Add in the shiitake mushrooms, bamboo shoots, and
carrots. Cook for 5-7 minutes, or until the vegetables are delicate.
2.
Add
the diced tofu to the pot and stir to combine. Decrease the intensity to
medium-low and let the soup stew.
3.
In
a little bowl, whisk together the cornstarch and water until very much
consolidate. Add the cornstarch mixture to the soup and stir well.
4.
Add
the rice vinegar, soy sauce, chili paste, and sesame oil to the soup. Stir to
combine and let the soup simmer for an additional 5-10 minutes, or until it has
thickened slightly.
5.
Slowly
pour the beaten eggs into the soup, stirring constantly. The eggs will cook and
form small ribbons in the soup.
6.
Add
the chopped green onions to the soup and stir to combine. Season with salt and
pepper to taste.
7.
Serve
hot and enjoy!
