          Hareesa


Hareesa is a delicious and hearty dish from the Middle East, made with ground wheat and meat, and flavored with aromatic spices. Here's a recipe to make Hareesa:

Ingredients:

  • 2 cups whole wheat grains
  • 1 lb ground lamb or beef
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon cardamom powder
  • 1/2 teaspoon nutmeg powder
  • 1/2 teaspoon black pepper
  • 1/2 cup olive oil
  • 1/2 cup butter
  • Salt to taste
  • Pine nuts and parsley for garnish

Instructions:

1.   Rinse the wheat grains and soak them in water for at least 8 hours or overnight.

2.   Drain the water from the wheat grains and place them in a food processor. Pulse until the grains are finely ground.

3.   In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic and sauté until the onions are translucent.

4.   Add the ground lamb or beef to the pot and stir well, breaking up any clumps of meat. Cook until the meat is browned.

5.   Add the ground wheat to the pot and stir well to combine with the meat.

6.   Add the cumin powder, coriander powder, cinnamon powder, cardamom powder, nutmeg powder, black pepper, and salt to taste. Mix well to consolidate every one of the fixing.

7.   Add enough water to cover the wheat and meat mixture by about 1 inch. Bring the pot to a boil, then reduce the heat to low and let the mixture simmer for about 2 hours, stirring occasionally.

8.   As the mixture cooks, it will thicken and become creamy. You can change the consistency y adding more water if necessary.

9.   Once the Hareesa is cooked, remove the pot from the heat and let it cool slightly.

10.                 Using an immersion blender or a food processor, blend the mixture until it becomes smooth and creamy.

11.                 Return the pot to low heat and cook for an additional 30 minutes, stirring occasionally.

12.                 Serve hot, garnished with pine nuts and parsley.

Hareesa can be served on its own as a hearty main dish or as a side dish with bread or rice. Enjoy!
