Gajar Ka Halwa
Here's a recipe for
gajar ka halwa, a delicious Indian dessert made with grated carrots, milk,
sugar, and ghee.
Ingredients:

kg carrots, peeled and grated
- 1
liter full-fat milk
- 1
cup sugar
- 1/2
cup ghee (clarified butter)
- 1/4
cup chopped cashews and almonds
- 1/4
teaspoon cardamom powder
- A
pinch of saffron threads
- 2
tablespoons raisins (optional)
Instructions:

Start by grating the carrots using a fine grater.
You can likewise involve a food processor for this step.

In a large, heavy-bottomed pan, heat the ghee
over medium heat. Add the ground carrots and mix well to cover them in the
ghee.

Cook the carrots, stirring frequently, for
about 10-15 minutes or until they start to soften and release their juices.

Add the milk to the container and heat it to
the point of boiling. Then reduce the heat to low and let the carrots cook in
the milk, stirring occasionally, until the milk has been absorbed and the
mixture has thickened. This should take about 1 to 1.5 hours.

Once the milk has been absorbed, add the sugar
to the pan and continue to cook over low heat, stirring frequently, until the
sugar has dissolved and the mixture has thickened even more.

Add the chopped nuts, cardamom powder, saffron
threads, and raisins (if using) to the pan and stir well to combine.

Cook for an additional 5-10 minutes, stirring
occasionally, until the gajar ka halwa has a rich, caramelized color and
texture.
8.
Serve the gajar ka halwa hot, garnished with
additional chopped nuts, if desired.
