Ingredients:
- 4 cups all-purpose flour
- 1 tablespoon active dry yeast
- 1 tablespoon sugar
- 1 1/2 teaspoons salt
- 1 1/2 cups warm water
(110-115°F)
- 1/3 cup extra-virgin olive oil
- 2-3 tablespoons fresh rosemary
- Coarse sea salt
Instructions:

In
a large mixing bowl, whisk together the flour, yeast, sugar, and salt.

Gradually
add in the warm water and olive oil, stirring until the dough comes together.
3.
Turn
the dough out onto a lightly floured surface and knead for 8-10 minutes, until
the dough is smooth and elastic.
4.
Grease
a large bowl with olive oil and place the dough inside, turning to coat it with
oil. Cover the bowl with plastic wrap and let it rise in a warm, draft-free
place for 1 hour, or until doubled in size.
5.
Preheat
the oven to 425°F and grease a baking sheet with olive oil.
6.
Punch
down the dough and turn it out onto the prepared baking sheet. Use your fingers
to gently press and stretch the dough to fit the size of the pan.
7.
Drizzle
the top of the dough with additional olive oil and sprinkle with coarse sea salt
and fresh rosemary.
8.
Let
the dough rise again for 15-20 minutes.
9.
Bake
the focaccia in the preheated oven for 20-25 minutes, or until golden brown and
cooked through.
10. Let the focaccia cool for a few
minutes before slicing and serving.
