Chicken Paratha Roll
Ingredients:
- 4-6 parathas (homemade or
store-bought)
- 250 grams boneless chicken (cut
into small pieces)
- 1 onion (finely chopped)
- 1 tomato (finely chopped)
- 2 green chilies (finely chopped)
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala powder
- Salt to taste
- 2 tbsp cooking oil
- 2 eggs (lightly beaten)
- 1/4 cup chopped fresh coriander
leaves
Instructions:
1.
In
a pan, heat cooking oil over medium heat. Add the chopped onions and cook until
soft and translucent.
2.
Add
ginger paste and garlic paste to the pan and sauté for a minute until fragrant.
3.
Add
the boneless chicken pieces, red chili powder, cumin powder, coriander powder,
turmeric powder, garam masala powder, and salt to taste. Mix well and cook
until the chicken is tender and cooked through.
4.
Add
chopped tomatoes and green chilies to the pan and cook for another 2-3 minutes.
Set aside.
5.
Heat
a non-stick pan over medium heat. Add the paratha to the pan and cook for 30
seconds on each side until it is slightly crisp and lightly browned. Remove
from the pan and set aside.
6.
In
the same pan, pour the beaten eggs and cook until set. Place the cooked paratha
on top of the egg and press down gently to stick them together.
7.
Spoon
some of the chicken filling onto the center of the paratha and sprinkle with
chopped coriander leaves. Fold the paratha over the filling and roll it up
tightly.
8.
Wrap
the roll in a sheet of aluminum foil and serve hot.
