                                                               Chicken Biryani



Chicken Biryani Recipe:

Ingredients:

1.5 lbs boneless chicken, cut into small pieces

2 cups basmati rice

1 large onion, thinly sliced

3 tomatoes, chopped

2 green chilies, sliced

2 tbsp ginger-garlic paste

1 tsp turmeric powder

2 tsp coriander powder

1 tsp cumin powder

1 tsp red chili powder

1 tsp garam masala

1 tsp biryani masala (optional)

1 cup plain yogurt

2 tbsp lemon juice

Salt to taste

2 cups chicken stock or water

2 tbsp ghee or oil

2 tbsp fried onions

1/2 cup coriander leaves, chopped

1/2 cup mint leaves, chopped

1 tsp saffron strands (optional)

1/2 cup milk

Instructions:

 soak rice after clean them in water for 30 minutes.

In a pan, heat ghee or oil and sauté sliced onions until golden brown.

Add green chillies,garlic,ginger paste, and cook.

Add chopped tomatoes, turmeric powder, coriander powder, cumin powder, red chili powder, biryani masala (if using), and salt to taste. Cook tomatos to soft.

Add chicken  and let it browned on all sides.

Stir in yogurt, lemon juice, and 1 cup of chicken stock or water. Cover and cook the chicken properly.

In a separate pot, bring the remaining 1 cup of chicken stock or water to a boil. Drain the soaked basmati rice and add it to the boiling water. Cook until the rice is almost done.

In a large casserole or oven-safe dish, spread a layer of cooked rice at the bottom. Spoon the chicken mixture over the rice. Repeat with another layer of chicken and rice.

Sprinkle the top layer with fried onions, chopped coriander and mint leaves.

If using, soak saffron strands in warm milk and pour it over the biryani.

Cover the dish tightly with aluminum foil. Bake in a preheated oven at 350°F for 25-30 minutes, or until the rice is fully cooked and the flavors have melded together.

Serve hot with raita.
