What is the Arancini Recipe?
Arancini are
traditional Sicilian snacks made with leftover risotto rice, stuffed with
cheese or meat, and then deep-fried to a golden crisp. Here's a recipe for
making arancini:
Ingredients:
- 2 cups leftover risotto
- 1 cup grated Parmesan cheese
- 4 oz. mozzarella cheese, cut
into small cubes
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup Italian-style breadcrumbs
- Vegetable oil, for frying
Instructions:
1.
In
a large mixing bowl, combine the leftover risotto with the grated Parmesan
cheese. Mix well until the cheese is evenly distributed.

Take
a small handful of the risotto mixture and form it into a ball about the size
of a golf ball. Use your fingers to make a small indentation in the center of
the ball, and place a small cube of mozzarella cheese inside. Use your fingers
to close the ball around the cheese, making sure it is completely covered.

Repeat
the process until all the risotto mixture is used up. You should have around
12-15 balls.

In
three separate bowls, set up a station for breading the arancini. Place the
flour in one bowl, the beaten eggs in another, and the breadcrumbs in the
third.

Roll
each arancini ball in the flour, shaking off any excess. Dip it in the beaten
eggs, making sure it is completely coated, then roll it in the breadcrumbs,
pressing lightly to make sure the crumbs adhere.
6.
In
a large pot or deep fryer, heat the vegetable oil to 350°F. Carefully drop the
arancini balls into the hot oil, a few at a time, and fry until golden brown,
about 3-4 minutes.
7.
Remove
the arancini with a slotted spoon and place them on a paper towel-lined plate
to drain any excess oil. Serve hot and enjoy!
Optional:
You can serve arancini with a side of marinara sauce for dipping.
